Shrubs, also known as drinking vinegar or vinegar cordials, have a long history in drinking spanning many cultures and origins. While the history of drinking shrubs is long and convoluted with appearances in 15th and 16th century English medicinal cordials, shrubs fell out of favor in modern times and were only relatively recently re-visited as a great source of acidity, sweetness, and fruit-forward flavors for cocktails. The Imperialist makes use of a Green Tea and Orange Shrub that pairs nicely with the PostModern Spirits Navy Strength Empirical Dry Gin and PostModern Spirits Chamomile Liqueur.

Ingredients:

Empirical Gin 1.25 ounce
Chamomile Liqueur 1 ounce
Green Tea Shrub* 1 ounce
Lemon Juice 0.25 ounce
Earl Grey Tincture Splash

Garnish:

Dehydrated Orange & Cute Flowers

Method:

Shake all ingredients with Ice & Strain into a coupe and splash with soda water. Garnish with a dehydrated orange & cute flowers.

*Green Tea Shrub: Combine 1.5 C Vinegar, 1.5 C Sugar, and 2 ounces Honey over medium heat and stir until combined. Add Orange Zest, Orange Juice and 1 Orange to pot and simmer for 10 minutes. Remove from heat and add 10 green tea bags and steep for 10 minutes.
