The Winchester, Brian Miller’s modern classic Tiki cocktail, is beloved by Tiki experts and enthusiasts alike. It is “a hell of a good drink,” says Martin Cate of Smuggler’s Cove, and Jeff “Beachbum” Berry calls it, “the first and best cocktail of the 21st century to push the boundaries of classic Tiki.” At its core, The Winchester builds off the structure of a Zombie, but makes some key substitutions. For example, The Winchester is a gin-based drink. For the POMO Winchester, a blend of the citrus forward Giniferous Gin is paired with the high proof, Navy Strength Empirical Dry Gin, and rounded out with the fragrant & herbal notes of the Chamomile Liqueur ~ with its aroma of elderflower, apricot, lavender and chamomile flowers.

Glass:

Tiki Mug or Collins Glass

Ingredients:

1.25 ounce PostModern Spirits Giniferous Gin
1.25 ounce PostModern Spirits Empirical Gin
0.75 ounce PostModern Spirits Chamomile Liqueur
0.75 ounce Lime Juice
0.75 ounce Grapefruit Juice
0.5 ounce Grenadine
0.5 ounce Ginger Syrup
1 dash Angostura Bitters

Garnish:

Lime Wedge

Method:

Shake all ingredients with ice and strain into ice filled Tiki Mug or Collins Glass.
