Empirical Dry Gin

The Clover Club is a cocktail that pre-dates Prohibition. In its traditional form, the cocktail calls for gin, lemon juice, raspberry, and egg whites. This PostModern adaptation for the cooler temperatures includes the spicy character of ginger syrup and allspice dram, and forgoes the inclusion of egg whites. The resulting cocktail has more spice character than the traditional Clover Club cocktail and a softer mouthfeel.




Empirical Gin 1.5 ounce
Raspberry Syrup* 1 ounce
Ginger Syrup** 0.5 ounce
Allspice Dram 0.5 ounce
Lemon Juice 0.5 ounce
Walnut Bitters 4 dash


Lemon Twist


Shake all ingredients with Ice & Strain into a coupe. Garnish with a lemon twist.

*Raspberry Syrup – Heat 1 cup water with 1 cup sugar & 1 cup Raspberries. Heat to boil while stirring, simmer for 10 minutes. Process in blender and then strain solids out. Retain liquid.

**Ginger Syrup – Heat 1 cup water with 1 cup sugar and 50 grams of grated, fresh ginger root until boiling. Simmer for 10 minutes. Strain solids and retain liquid.
