The art of making cocktails is often an experience of inexact science that does not travel a linear path. What began as a recipe for a straight-forward Aviator-style cocktail has morphed over several iterations to become a refreshing, balanced long drink. Built on the backbone of the citrus forward Giniferous Gin and the floral-driven Subrosa Liqueur, The Aviatrix trades in cloying maraschino liqueur flavors for the refreshingly tart nature of the in-house made Floral shrub, aka drinking vinegar.

Glass:

Collins

Ingredients:

Giniferous Gin 1.5 ounce
Subrosa Liqueur 1 ounce
Floral Shrub* 1 ounce
Lemon Juice 0.25 ounce
Amaro Arancia 0.25 ounce
Lavender Bitters 5 dash

Garnish:

Lemon Twist & Floral

Method:

Shake all ingredients with ice & strain into Collins Glass filled with ice (floral collins cube) and top with soda water. Garnish with lemon twist & floral component.

*Floral Shrub: Combine 2 C vinegar and 1.5 C sugar over medium heat. Add lemon zest & lemon juice from 1 Lemon and simmer for 10 minutes. Remove from heat and add dried flowers (2T Rosehips, 2T Hibiscus, 2T Lavender). Let cool, strain and add orange blossom water.
